    What is Isomalt?

Isomalt, also known as palatinitol, is a sugar substitute or sugar alcohol derived from sugar beets. It is a functional sweetener used as a sucrose substitute in a wide variety of foods, including hard candies, biscuits, cereals, chocolate, meal replacements, jams, cakes, ice cream, and cream. Because it can extend the shelf life of certain products, isomalt is also widely used as a preservative. In the health supplement and pharmaceutical industries, it is widely used in the production of various dosage forms due to its low yield stress and friability when compressed into tablets, as well as its high drug dilution capacity.

    Isomalt: A Functional Sugar-Free Sweetener

Isomalt, an emerging functional sugar-free sweetener, originated in Europe in the late 1990s. It shares the common characteristics of functional sugar alcohols, such as excellent metabolic properties. Its absorption rate in the human body is slower than that of sucrose, which does not cause a blood sugar spike. Insulin is not involved in its metabolic pathway, resulting in low cariogenicity, lower sweetness than sucrose, and a relatively low energy value.

Compared to other sugar alcohols, its unique advantages include:

To date, it is the only disaccharide alcohol derived entirely from sucrose.

It offers a pure and natural sweetness, stable properties, and low solubility and hygroscopicity. It can completely replace sucrose and starch sugars at a 1:1 ratio, making it widely used in the production of sugar-free foods and pharmaceutical coatings.

It is highly tolerable. While many sweeteners, such as sorbitol, xylitol, hydrogenated glucose syrup, maltitol syrup, and many oligosaccharides, can cause abdominal distension, bowel sounds, and diarrhea if consumed in excess, isomalt is well tolerated by the human body; a daily intake of 50g does not cause gastrointestinal discomfort.

Non-cariogenic: It cannot be decomposed or utilized by Streptococcus mutans in the mouth, producing neither acid nor glucan, thus preventing tooth decay. It is particularly suitable for children.

Highly stable: Isomalt is a polyol with no reducing properties and is extremely stable. It does not hydrolyze in strong acidic or alkaline conditions, nor does it produce pigments at very high temperatures. Compared to sucrose, its stability is over 10 times greater. It also does not chemically react with other food ingredients, such as the Maillard reaction with amino acids. Since isomalt cannot be utilized by most microorganisms, products made with isomalt have a longer shelf life.

    Isomalt's Health Benefits

Low Digestibility: Isomalt is slowly and incompletely hydrolyzed into glucose, mannitol, and sorbitol in the stomach and small intestine. Mannitol and sorbitol are only partially absorbed in the small intestine, while glucose is rapidly absorbed. Research shows that 90% of ingested isomalt reaches the colon, where it ferments with intestinal flora to produce gas, making it low in digestibility.

Low GI: Research shows that isomalt has a GI value between 2 and 12, resulting in a gentle blood sugar response after consumption, with the increase significantly less than that of glucose. The insulin index of isomalt is only 6% of that of glucose, indicating that it does not significantly increase insulin levels after consumption.

Anti-Obesity: Isomalt is slowly digested and absorbed in the gastrointestinal tract, resulting in relatively smooth fluctuations in blood sugar and insulin levels, maintaining them at moderate levels. This prevents hypoglycemia and helps prolong satiety. Isomalt also has an energy value of 8 kJ/g, half that of most carbohydrates. This low energy value and low glycemic profile are beneficial for weight prevention and management.

Improves intestinal health: Isomalt is an excellent bifidobacterium proliferation factor. Although it cannot be utilized by human enzymes or most microbial enzymes, it can be broken down and utilized by bifidobacteria in the human intestine, promoting their growth and proliferation, maintaining intestinal microecological balance, and benefiting human health.

Anti-caries: As a natural sweetener, isomalt exhibits significantly better anti-caries properties than sucrose. Studies have shown that different serotypes of Streptococcus mutans can rapidly produce acid in sucrose, glucose, and maltose, but not in isomalt. Interestingly, isomalt is not fermented by oral bacteria to produce insoluble glucans that cause dental caries. Furthermore, adding isomalt to sucrose significantly inhibits the production of insoluble glucans. Isomalt inhibits the synthesis of insoluble glucans from sucrose by Streptococcus mutans, thus giving it the ability to prevent or prevent dental caries.

    Applications of Isomalt

Due to its unique properties, isomalt is suitable for production using standard production equipment. It offers the pure taste of sucrose, without any unpleasant aftertaste or off-flavors. It can synergize with intense sweeteners, masking their unpleasant aftertaste and off-flavors. Its low hygroscopicity, high stability, low energy content, and non-caries-prone properties make it a perfect sugar substitute. Isomalt is widely used in the production of various foods, including hard candies, soft candies, chewing gum, chocolate, jelly, soft drinks, ice cream, baked goods, and tablets.

    Hard Candies

Because isomalt has low water absorption, it prevents sticking and cold flow when producing stamped, filled, bonded, or cast hard candies. This allows for bulk packaging, eliminating the need for heat sealing and individual packaging, significantly reducing costs and extending product shelf life.

    Candy Coating

Isomalt's low water absorption also has widespread application in this field. 160-200 mesh powdered isomalt used in candy coatings can extend the shelf life of candies, making them easier to package and reducing production costs.

    Chewing Gum and Tablets

Isomalt has low solubility and forms crystals in chewing gum and tablets. Its taste is very similar to sucrose, with a mild sweetness and low negative heat of dissolution. This allows the flavor of candies to fully develop, and the sweetness lingers longer than other products.

    Chocolate

Isomalt has low negative solubility and a pure taste comparable to sucrose, making it an ideal ingredient for producing chocolate suitable for diabetics, those concerned about obesity, or low-calorie chocolate.

    Health Foods and Pharmaceuticals

As a tablet filler, it facilitates molding, protects the active ingredients, and mitigates the medicinal taste. It is commonly used in vitamin tablets and probiotic drinks.

It has both sweetness and prebiotic functions, helping probiotics to colonize the intestines and promote intestinal health.
