    Citrus pectin is a natural high-molecular-weight polysaccharide complex extracted from the peel and pulp of citrus fruits (such as oranges, lemons, grapefruits, and tangerines) using modern extraction technology. Chemically, it is an acidic heteropolysaccharide with D-galacturonic acid as the main chain linked by α-1,4 glycosidic bonds, and its molecular weight typically ranges from tens of thousands to hundreds of thousands of Daltons. Based on the degree of carboxyl esterification, it can be divided into high-ester pectin and low-ester pectin. As a representative of natural water-soluble dietary fiber, citrus pectin is mostly a white to pale yellow powder, easily soluble in water to form a viscous colloid.
