    What is Rutin?

    Rutin is classified as a flavonol; specifically, it is the rutinoside of quercetin and constitutes a bioactive flavonoid component widely distributed in natural plants. Its distribution is extensive, commonly found in rue, tartary buckwheat, *Sophora japonica* flower buds, catalpa leaves, and tomatoes, as well as in medicinal-edible plants such as Chinese jujube, hawthorn, ginkgo, goji berry, aloe, and *Gynostemma pentaphyllum*. Dried buckwheat harvested near the flowering stage typically contains approximately 3% rutin, whereas the flower buds of the leguminous *Sophora japonica* tree—known as *Huaimi*—can contain over 20%; consequently, these buds serve as the primary raw material for the industrial extraction of rutin within China.

    Rutin possesses distinct physicochemical properties; it is prone to hydrolysis under conditions of strong acidity or alkalinity and exhibits poor color stability within alkaline systems.
