Cellulase (scientific name: β-1,4-glucan-4-glucan hydrolase) is a group of enzymes that degrade cellulose to produce glucose. It mainly consists of endo-β-glucanase, exo-β-glucanase, and β-glucosidase, along with highly active xylanase. Cellulase is widely found in nature and can be produced by bacteria, fungi, and animals.
